Traditional Rennet Blue Stilton from Cropwell Bishop using a special hand-ladled recipe. Using traditional animal rennet to create a delicious, silky-smooth cheese. This is the strongest of the Cropwell Bishop cheeses aged for up to 15 weeks to give it a luxuriously complex flavour that lingers in the mouth.
We gently smoke the cheese over a combination of oak and beech wood to impart a subtle yet distinct smoky flavour that complements and enhances the complex flavours perfectly. We never lose sight of the fact the cheese is the star.
